While in India I have been able to regularly eat one of my favorite foods in the world, dosa. Dosa is a sort of savory pancake that is served with coconut chutney and sambar (an Indian soup like product). The main batter for the dosa is made from fermented rice and lentils. I normally order a masala dosa which has chili paste on the inside along with potatoes and curry leaves. The chili paste is a Bangalore custom and masala dosa from other parts of of India don't have it. I also like to order onion dosa which is thicker dosa that has onion cooked into it.
